Smoothies are a fantastic way to pack a variety of nutrients into a quick breakfast, and the beet and blueberry smoothie is no exception. All you need is a blender or a magic bullet and a few simple ingredients to make this superfood smoothie that's literally packed with vitamins and minerals.

- Beet: You'll need one medium sized beet that's peeled and chopped. You can also use cooked beets, but do not use pickled beets (for obvious reasons).
- Almond Milk: You can use almond milk, oat milk, soy milk or even coconut water.
- Coconut Yogurt: I love the subtle coconut flavor that coconut yogurt contributes, but feel free to use any plant-based yogurt that you have on hand. You can also omit the yogurt completely, but your beet and blueberry smoothie won't be as creamy.
- Chia Seeds: Chia seeds are nutritional powerhouses, which make this smoothie ultra healthy. They have fiber, omega-3 fatty acids, and protein.
- Blueberries: You can use fresh or frozen blueberries. If you use frozen blueberries, you can omit the ice called for in the recipe.

- Prepare the Beets: If using raw beets, peel and chop them into small pieces. If using cooked beets, simply chop them up.
- Blend the Ingredients: In a blender, combine the chopped beets, blueberries, banana, coconut yogurt (if using), almond milk, maple syrup, vanilla extract, chia seeds or flaxseeds (if using), and ice cubes.
- Blend Until Smooth: Blend on high until all the ingredients are well combined and the smoothie is smooth and creamy.
- Taste and Adjust: Taste the smoothie and adjust the sweetness or consistency if needed. Add more maple syrup for sweetness or more almond milk to thin it out.
