Ingredients

  • 1 small beet peeled and chopped (or ½ cup cooked beets)
  • 1 cup blueberries fresh or frozen
  • 1 banana for creaminess and sweetness
  • ½ cup coconut yogurt or your favorite plant-based yogurt
  • 1 cup almond milk or any milk of your choice
  • 1 tablespoon honey or maple syrup optional, for additional sweetness
  • ½ teaspoon vanilla extract
  • 1 tablespoon chia seeds or flaxseeds optional for added nutrition
  • A handful of ice cubes if using fresh blueberries

Instructions

  • If using raw beets, peel and chop them into small pieces. If using cooked beets, simply chop them up.
  • In a blender, combine the chopped beets, blueberries, banana, yogurt (if using), almond milk, maple syrup, vanilla extract, chia seeds or flaxseeds (if using), and ice cubes.
  • Blend on high until all the ingredients are well combined and the smoothie is smooth and creamy.
  • Taste the smoothie and adjust the sweetness or consistency if needed. Add more honey/maple syrup for sweetness or more almond milk to thin it out.
  • Pour the smoothie into glasses and enjoy immediately!

Notes

Notes:  If using frozen blueberries or bananas, you can omit the ice called for in the recipe.
