    Calling all avocado toast lovers! This is a super delicious twist on that most classic of instagrammable breakfasts - tomato avocado toast (with a cilantro lime dressing.) Not only is beautiful enough for posting to your feed, it's so delicious you won't be able to stop at just one. This recipe is a little bit simpler than my recipe for traditional avocado spread, which can be used as a replacement for butter.

    Tomato avocado toast is loaded with healthy fats, fiber, and nutrients, making it a great choice for anyone looking to start their day off on a healthy note.

    Plus, it's incredibly easy to make and you can easily customize it to suit your taste preferences. Whether you're a seasoned avocado toast lover or just trying it for the first time, I promise you'll have this recipe on repeat.

    Ingredients, Substitutions And Tips

    • Bread: I'm using sourdough, but any bread will do. For more information on bread's suitability for a vegan diet, check out my article, Is Bread Vegan? This recipe can be made gluten free by simply using your favorite gluten free bread.
    • Olive Oil: I think that tomato avocado toast is best if the bread has a delightful crunch to it. That's why I recommend toasting your bread in the oven with a swipe of olive oil on each side. Having said that, if you're in a rush, or want to save on the calories, please feel free to toast your bread in the toaster.
    • Garlic: You'd be surprised what a flavor booster garlic can be with a just a little rub from a broken clove.
    • Avocado: Choose a ripe avocado. A ripe avocado should have a dark skin. It should feel slightly soft when gently pressed, but not mushy.
    • Lime Juice: We'll be using lime juice to keep your avocado from browning. It also adds tangy, zesty flavor that's a great complement to avocado.
    • Tomatoes: I'm using cherry tomatoes because they're generally sweeter than larger varieties of tomatoes. However, if you want to use a regular tomato, that's fine too.
    • Cilantro: You'll need a good handful of cilantro for the cilantro lime dressing.
    • Dairy Free Yogurt: Use your favorite brand of dairy free/ vegan yogurt.
    • Salt & Pepper: Seasoning is a must here!

    How To Make Tomato Avocado Toast

    • Preheat your oven to 375ยฐF, 190ยฐ C.
    • Slice your bread into ยฝ-inch thick slices and place them on a baking sheet. Brush both sides of the bread slices with olive oil.
    • Cut the garlic clove in half and rub the cut side of the garlic onto the bread slices. This will add a delicious garlic flavor to the toasts.
    • Place the baking sheet in the oven and bake for 10-12 minutes, or until the bread is toasted and lightly browned.

    • While your bread is toasting, prepare the cilantro lime dressing. In a blender or food processor whiz together the ingredients for the cilantro lime dressing. Set aside.

    • Cut the tomatoes into thin rounds and set aside.
    • Cut the avocados in half and remove the pits. Scoop the avocado flesh into a medium-sized bowl. Squeeze 1 tablespoon of lime juice into the avocado.

    • When your bread is done toasting, remove it from the oven and let it cool for a few minutes. Spread the avocado mixture evenly over each slice of toast. Top with the tomato slices.
    • Pour the dressing over the avocado and tomato mixtures.
    • Serve and enjoy your delicious tomato avocado toasts with a fresh and zesty cilantro-lime dressing!

    Variations On Tomato Avocado Toast

    • Pesto Avocado Toast: Spread a layer of pesto on your toast, then top with mashed avocado and slices of tomato. Sprinkle with pine nuts or chopped fresh basil for extra flavor.
    • Vegan BLT Avocado Toast: Mash your avocado with a squeeze of lime juice and salt. Top with crispy vegan bacon, slices of tomato, and lettuce leaves. Drizzle with your favorite creamy dressing or vegan mayo.
    • Mediterranean Avocado Toast: Mash your avocado with lemon juice and salt. Top with chopped tomato, and a few kalamata olives. Sprinkle with dried oregano or za'atar seasoning.
    • Spicy Avocado Toast: Mash your avocado with a squeeze of lime juice and a pinch of salt. Top with sliced tomatoes, thinly sliced jalapeรฑos, and a sprinkle of red pepper flakes.
    • Roasted Tomato Avocado Toast: Why not use roasted tomatoes on your tomato avocado toast.

    Ingredients
     
     

    • 4 slices of bread your choice of bread
    • 1 tablespoon olive oil
    • 1 clove of garlic
    • 2 ripe avocados
    • 1 tablespoon lime juice
    • 10 cherry tomatoes or regular tomatoes finely chopped

    Cilantro Lime Dressing

    • 1 cup of chopped fresh cilantro
    • 2 tablespoons lime juice
    • ยฝ cup dairy free yogurt
    • 2 tablespoons olive oil
    • ยผ teaspoon of salt
    • ยผ teaspoon of black pepper

    Instructions
     

    For The Garlic Toasts

    • Preheat your oven to 375ยฐF, 190ยฐ C.

    • When the bread is done toasting, remove it from the oven and let it cool for a few minutes. Spread the avocado mixture evenly over each slice of toast. Top with the tomato slices.
    • Pour the dressing over the avocado and tomato mixtures.
    • Serve and enjoy your delicious tomato avocado toasts with a fresh and zesty cilantro-lime dressing!
