These tomato avocado toasts with cilantro lime dressing make a truly delicious and nutritious breakfast or snack option. The creaminess of the mashed avocado pairs perfectly with the juicy sweetness of the tomatoes, while the tangy cilantro lime dressing adds a zesty refreshing kick.
Slice the bread into ½-inch thick slices and place them on a baking sheet. Brush both sides of the bread slices with olive oil.
Cut the garlic clove in half and rub the cut side of the garlic onto the bread slices. This will add a delicious garlic flavor to the toasts.
Place the baking sheet in the oven and bake for 10-12 minutes, or until the bread is toasted and lightly browned.
Make The Cilantro Lime Dressing
While the bread is toasting, prepare the cilantro lime dressing. In a blender or food processor whiz together the ingredients for the cilantro lime dressing. Set aside.
Assemble The Tomato Avocado Toasts
Cut the tomatoes into thin rounds and set aside.
Cut the avocados in half and remove the pits. Scoop the avocado flesh into a medium-sized bowl. Squeeze 1 tablespoon of lime juice into the avocado. *see note 1
When the bread is done toasting, remove it from the oven and let it cool for a few minutes. Spread the avocado mixture evenly over each slice of toast. Top with the tomato slices.
Pour the dressing over the avocado and tomato mixtures.
Serve and enjoy your delicious tomato avocado toasts with a fresh and zesty cilantro-lime dressing!

Notes
It's best to mash the avocado right before your garlic toasts come out of the oven. Avocado has a tendency to brown quite quickly.
