Oat flour pancakes are tender and fluffy, but more substantial and chewy than pancakes made with all purpose flour. Perfect for a weekend breakfast, they can be whipped up in under 30 minutes. They're gluten and dairy free, and you don't need any complicated ingredients to make them. In fact, you probably already have all the ingredients in your pantry.

If you've tried my popular almond flour pancakes or my high protein tofu pancakes, you'll know that pancakes are one of my favorite brunch treats. And, these oat flour pancakes are no exception.
Oat flour is one of my favorite gluten free flours. You can substitute it for all purpose flour in cookies and waffles. It has an earthy, nutty flavor and the unique ability to soak up the flavors it's mixed with. These pancakes are sweetened with maple syrup and vanilla, so they are slightly sweet with a caramel flavor.

Ingredients
- Rolled Oats: Choose old fashioned rolled oats or quick cook oats. Steel cut oats are too dense for this recipe.
- Plant Based Milk: I used almond milk, but any plant based milk will do.
- Apple Cider Vinegar: Apple cider vinegar plus a plant based milk equals vegan buttermilk.
- Vanilla: Choose a good quality vanilla extract. The flavor really makes a difference to baked goods.
- Baking Soda and Baking Powder: You'll need both of these leavening agents to prevent your pancakes from being too dense.

- Salt: Salt makes all the other flavors pop.
*you'll also need a small amount of oil or vegan butter to cook the pancakes in.

Health Benefits of Oat Flour
You can make your own flour by simply blending any kind of rolled oats in a food processor. If you buy it at the grocery store it's generally stone ground, and is therefor much less processed that all purpose flour.
Oat flour has a a lot of fiber and protein. It also contains calcium, potassium and iron. Overall, it's a much healthier option than wheat flour.
It's uncommon to be sensitive to oats, so allergies and intolerances are rare. It's the perfect choice if you're intolerant to gluten, or if you choose to avoid gluten in your diet.


Instructions
- Firstly, make your vegan buttermilk by combining your almond milk with the apple cider vinegar. Set the mixture aside for about 10 minutes and allow it to curdle.
- If you're making your own oat flour, put the rolled oats in a food processor and blend until they have the consistency of flour. Make sure that your flour is finely ground.
- Sift together the dry ingredients (including your oat flour) into a large bowl.
- Add the vanilla to the vegan buttermilk and pour the wet ingredients into the bowl. Stir gently, being careful not to over mix.
- Heat vegan butter in a non-stick fry pan. Add the batter to the pan ยผ cup at a time . Allow the pancakes to cook for 1-2 minutes on each side. Oat flour pancakes darken quicker than wheat flour pancakes.

Oat flour pancakes are substantial and filling enough to eat on their own, but here's a few suggestions if you're planning a vegan brunch:
- These pancakes would be good with vegan bacon.
- If you like bananas, caramelized bananas would be a delicious topping.
- A smearing of date jam would compliment the flavors of oat flour pancakes well.
- Add a scoop of peanut butter to the batter for an extra boost of protein.
- A teaspoon of cinnamon would be a lovely addition.
