- Rolled Oats: Be sure to choose rolled oats, not steel cut oats or quick-cook oats. Sometimes rolled oats are called "old fashioned oats."
- Peaches: You'll need 3 fresh, ripe peaches to make peach baked oatmeal. A ripe peach has a sweet smell. It should be slightly soft; if it feels too firm, it's not ripe. The color should be yellow (with red), and it should be round. A peach gets more round as it ripens.
- Cinnamon: We'll be making these baked oats peach pie style, and that means using cinnamon. Peaches and cinnamon are a classic flavor pairing that you can' go wrong with.
- Brown Sugar: I used light brown sugar, but dark is fine too.
- Salt: Salt enhances all the other flavors.
- Baking Powder: Baking powder is the leavening agent that we'll be using to make your baked oats rise.
- Chia Seeds: Chia seeds serve a two-fold purpose in this recipe. First of all, they make a fantastic egg replacer. Secondly, chia seeds are nutrition powerhouses; they're loaded with protein, omega 3 and omega 6 fatty acids. Using chia seeds in baked oats is a great way to give your breakfast a huge nutrition boost.
- Almonds: We'll be sprinkling slivered almonds over the top of your peach baked oatmeal. Almonds are seriously nutritious, plus they add an extra bit of welcome crunch.
- Almond Milk: I used almond milk in this recipe, but any plant based milk will do.
- Vanilla: I love the flavor of vanilla in all my baked goods. Be sure to choose the best quality vanilla you can afford. The flavor of a quality vanilla extract is noticeably different from its cheaper counterpart.
- Coconut Oil: I used coconut oil in this recipe, but you could also use any kind of melted plant based butter.
How To Make Peach Baked Oatmeal
- Preheat your oven to 350ยฐ F (175ยฐ C). Grease an 8x8 inch baking dish with vegan butter or coconut oil.
- Put the chia seeds and warm water in a cup. Set aside.
- In a large bowl combine the oats, brown sugar, baking powder, cinnamon and sea salt. Stir to combine.
- In a small bowl combine your milk, melted coconut oil, vanilla and the chia/water mixture.
- Pour the wet ingredients into the bowl with the dry ingredients. Stir in your chopped peaches.
- Pour the mixture into the prepared pan, and topped with the sliced peaches. Sprinkle with the slivered almonds. Bake for 45 minutes.
- Let your baked oatmeal cool in the pan for 5 minutes, before cutting and serving.

Peach Baked Oatmeal
Ingredients

- 1ยฝ teaspoons baking powder
- 1 teaspoon cinnamon
- ยฝ teaspoon sea salt
- 1 cup almond milk
- ยผ cup coconut oil melted
- 1 teaspoon vanilla extract
- 2 peaches peeled and diced
- 1 peach sliced, no need to peel
- ยฝ cup slivered almonds
Instructions
