Peach Baked Oatmeal

This peach baked oatmeal is the perfect, juicy make-ahead breakfast. It only takes about 15 minutes hands-on time to make a healthy fiber rich breakfast full of juicy peaches, almonds and nutrition superfood star - chia seeds.

Ingredients
 
 

  • 2 tablespoons chia seeds plus 5 tablespoons warm water
  • 2 cups rolled oats
  • ⅓ cup brown sugar or coconut sugar, packed
  • 1½ teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon sea salt
  • 1 cup almond milk
  • ¼ cup coconut oil melted
  • 1 teaspoon vanilla extract
  • 2 peaches peeled and diced
  • 1 peach sliced, no need to peel
  • ½ cup slivered almonds

Instructions
 

  • Preheat the oven to 350° F (175° C). Grease an 8x8 inch baking dish with vegan butter or coconut oil.
  • Put the chia seeds and warm water in a cup. Set aside.
  • In a large bowl combine the oats, brown sugar, baking powder, cinnamon and sea salt. Stir to combine.
  • In a small bowl combine the milk, melted coconut oil, vanilla and the chia/water mixture.
  • Pour the wet ingredients into the bowl with the dry ingredients. Stir in the chopped peaches.
  • Pour the mixture into the prepared pan, and topped with the sliced peaches. Sprinkle with the slivered almonds. Bake for 45 minutes.
  • Allow the baked oatmeal to rest in the pan for 5-10 minutes before cutting it into squares and serving.

Notes

  1. Peach baked oats is naturally gluten free, but please be sure to check your package of oats to ensure that they aren't processed in a factory that contains gluten.  If you're on a strict gluten free diet, only buy oats that are labeled gluten free.
  2. Baked oatmeal will stay fresh in fridge for 3 days. You can also freeze baked oatmeal in an airtight container for up to 3 months.
