If you've seen my air fryer butternut squash or my zucchini fritters, you'll know how much I like to use my air fryer. The best thing about cooking in an air fryer is that it's healthier! And, there's virtually no mess to clean up.
These sweet potato cubes are a classic dish. Traditionally you'd pan-fry them, but that requires a lot of oil (and a big mess). When cooked in the air fryer they require minimal oil, but they still come out with crispy edges and a soft center.

Ingredients
- Sweet Potatoes: You'll need two large, or three medium sized sweet potatoes for this recipe. I've given instructions to peel them, but that's not necessary if you prefer skin-on potatoes.
- Olive Oil: I've found that 2 tablespoons of oil is the optimum amount to toss the sweet potato cubes in. This will insure that they get nice and crispy and caramelized. If you want to use less oil, that's fine too. You can even use an olive oil spray.
- Garlic Powder: Garlic powder is my go-to spice for air fryer recipes. If you use fresh garlic, the heat of the air fryer will burn the garlic and your sweet potato cubes will taste bitter.
- Onion Powder: Onion powder gives you that funky onion taste that you just can't get from any other spice.
- Paprika: I used smoked paprika for these air fryer sweet potato cubes. I think the smoky taste complements the sweetness of the potatoes, but if you'd like to turn up the heat, feel free to use hot paprika.
- Salt & Pepper: Salt enhances all the other flavors and pepper adds a nice spicy note.
Are Sweet Potatoes Healthy?
Interestingly, sweet potatoes are underground tubers that are only distant relatives to white potatoes.
Are they healthy? Indeed they are! Sweet potatoes are rich in antioxidants and high in fiber. They're a great source of vitamins and minerals including vitamin A, vitamin C, potassium, manganese, vitamin B6, B5 and vitamin E. They're also associated with a reduced risk of cancer and improved blood sugar regulation.
The moral of the story? Eat your sweet potatoes!


How To Make Air Fryer Sweet Potato Cubes
- If your air fryer requires pre heating, preheat it to 365ยฐ F (185ยฐ C). Lightly grease the insert.
- Peel your sweet potatoes and cut them into cubes. Try to keep the cubes evenly sized so that they cook at an even rate.
- In a large mixing bowl combine the oil and spices.
- Add the sweet potato cubes to the bowl and toss until they're evenly coated in the oil and spice mixture.
- Spread the sweet potatoes in an even layer in the air fryer. Depending on the size of your air fryer, you may need to work in two batches. Cook for 15-20 minutes, shaking the air fryer to turn the pieces over at the halfway point.

If you don't eat them straight out of the air fryer, here's a few ways to enjoy these yummy sweet potato cubes:
- Toss them into salads or scatter them over bowl.
- Eat them with a side of chipotle mayo or garlic aioli.
- Serve them as a side to a vegan meatloaf for a fantastic holiday meal.
