And, they come in quite a few varieties, like these wonderfully colored Murasaki sweet potatoes with white flesh and purple skins. Whether it's sweet potato soup or even crispy air fried sweet potatoes, something about this humble root vegetable just screams fall.

    That's why today I thought I'd share my all time favorite sweet potato recipe - simple vegan sweet potato mash. This delightfully creamy bowl of indulgence is the perfect sidekick to all the autumn vibes.

    • Almond Milk: I recommend using almond milk because it adds a nice nutty flavor. However, any plant-based milk that you have on hand will do.
    • Vegan Butter: Vegan butter from a block is the best choice here.

    • 3 large sweet potatoes peeled and diced
    • 2 tablespoons vegan butter
    • ยผ cup unsweetened almond milk or any plant-based milk of your choice
    • 1 tablespoon maple syrup
    • ยฝ teaspoon ground cinnamon
    • ยผ teaspoon ground nutmeg
    • Salt and pepper to taste
