Ingredients
- Potatoes: Russet potatoes work really well here because the skins stand up so well. You could also use Yukon Golds.
- Olive Oil: As always, I recommend using a good quality extra virgin olive oil. The flavor of a high quality olive oil really makes a difference.
- Cheese: My favorite vegan cheese is Violife. I used Epic Mature Cheddar in this recipe. You could also use their Tex Mex cheese for a different flavor. Any vegan cheese will do, but I think that Violife cheese melts really well and is a great choice here.
- Sour Cream: There's a few great brands of vegan sour cream out there. Tofutti and Forager are both great brands!
- Green Onions: Green onions are the perfect garnish for these air fryer.
- Bacon Bits: Did you know that almost all store bought brands of bacon bit (or bacon crumbles as they're sometimes called) are vegan? Or, if you're feeling super motivated, check out my recipe for homemade vegan bacon bits.
How To Make Air Fryer Potato Skins
- Wash your potatoes thoroughly. Dry them off and prick the skins 3 or four times with a fork. Spread the potatoes out in an even layer on a microwave safe plate. Wet a paper towel and cover the potatoes. Microwave for 15-17 minutes, turning the potatoes over once at the halfway point. Your potatoes should feel fully baked. When the sides are squeezed, they should feel soft.
- Remove the paper towel and transfer the potatoes to fridge to cool for 15-20 minutes.
- Cut each potato in half the long way. Scoop out the filling and save it for mashed potatoes. Leave about a ยผ inch of potato inside the skin.
- Brush the skins all over with olive oil and transfer them to the basket of the air fryer skin side up. You may need to work in batches, depending on the size of your air fryer. Cook for 10 minutes at 365ยฐ F (185ยฐ C).
- Flip the potatoes over and add the cheese and bacon bits. Cook for an additional 5 minutes.
- Remove the potato skins from the air fryer and garnish with sour cream and chopped green onions.
Variations And Suggestions
- How about Italian air fryer potato skins? Use mozzarella cheese instead of cheddar and top with pizza sauce and basil.
- Load your potato skins with a vegan Bolognese sauce.
