- In a medium sized bowl, melt your butter in the microwave. Now, whisk all the marinade ingredients into the butter.
- Add your baby carrots to the bowl and toss until they're coated in the marinade.
- Remove the carrots from the marinade with a slotted spoon. Do not discard the marinade. Transfer the carrots to the basked of an air fryer and cook at 400ยฐ F (204ยฐ C) for 10-12 minutes, shaking the basket halfway through. The larger your carrots, the longer they will need to cook. Baby carrots that are cut from larger carrots are thicker and might require more cooking time.
- Add the chopped pecans to the marinade, and toss to coat.
- When there's 2 minutes left on the timer, remove the pecans from the marinade with a slotted spoon and transfer them to the air fryer.
- Remove the carrots and pecans from the air fryer using a spatula or a slotted spoon and transfer to your serving dish.

Air Fry Baby Carrots Marinade
- 1 tablespoon olive oil
- 1 tablespoon vegan butter
- 2 tablespoons maple syrup
- 1 tablespoon apple cider vinegar
- ยผ teaspoon black pepper
- ยผ cup chopped pecans
Instructions

- Add the carrots to the bowl and toss until they're coated in the marinade.
- Remove the carrots from the marinade with a slotted spoon. Do not discard the marinade.
