Following on from the popularity of my lentil chips, I'm excited to share my latest gluten free (and vegan) homemade chip - chickpea chips!
High in protein and fiber, these homemade chips are easy to make and they're much healthier than anything you could buy at the grocery store. Plus, when you make your own chips, you can easily customise them to suit your tastes. Fancy a spicy chickpea chip? Add a bit of chili pepper? Don't like garlic? Simply omit it from the recipe. The options are endless.

What Are Chickpea Chips?
Chickpea chips are a flavorful chickpea cracker made with ground up chickpeas, also known as chickpea flour. Chickpea flour is a popular gluten free flour that yields wonderful results in baking. You might find it in the grocery store under the following names:
- Garbanzo Bean Flour
- Besan
- Gram Flour
The great thing about chickpea flour is that it has great binding properties, unlike a lot of other gluten free flours.
You can buy pre-packaged chickpea chips at the store, but why not make a completely additive, gluten, egg and dairy free version yourself? They're loaded with fiber and protein and are baked, not fried. The perfect healthy snack cracker!
My recipe yields crispy crackers with a lovely smoky garlicky flavor. However, feel free to use the basic chickpea cracker recipe as a template, and get creative with your own spice and herb combinations.
Instructions


Mix, Knead And Roll The Dough
- Preheat your oven to 350 F (175 C). Line a small baking tray with parchment paper.
- In a large mixing bowl, mix together your chickpea flour, baking powder, smoked paprika, garlic powder, olive oil and water. When the dough starts holding together work it a bit with your hands until it forms a ball.
- Dust a sheet of parchment paper with chickpea flour. This is important! If you don't dust your parchment paper with chickpea flour, they'll stick and be difficult to remove in one piece. Press the dough down with your hands, and cover with another piece of parchment paper. Using a rolling pin, roll the dough out until it's โ inch thick.

Cut Out Your Chickpea Chips
- Trim the edges of the dough to form a square and cut the chickpea chips into your desired shape. Poke holes in each chip with the tines of a fork.

Bake
- Transfer your chickpea chips to the prepared baking tray and sprinkle with sea salt. Bake for 15-20 minutes, or until the edges are starting to brown.

Frequently Asked Questions
Different chickpea flours absorb water at a different rate. Besan (aka gram flour) is very fine and easily absorbs water. You'll need less water when working with Besan. Chickpea flour or garbanzo flour is grainier and takes more water to form a dough.
Store them in an air tight container at room temperature for up to two weeks.
Making your own chickpea chips ensures that you can control the amount of sodium that goes into them, which is one of the biggest drawbacks of buying them at the grocery store. They're also loaded with fiber, zinc and folate.

Chickpea Chips
Ingredients
- 1 cup chickpea flour
- ๏ปฟยฝ ๏ปฟteaspoon baking powder
- 2 teaspoons smoked paprika
- ยฝ tablespoon garlic salt
- 1 teaspoon olive oil
- 3 tablespoons water
- ยผ teaspoon sea salt

Notes
- Some chickpea flours require less water than others to form a dough. Besan and gram flour require about 3 tablespoons of water. If you are using garbanzo or chickpea flour, you might need to add a bit more water to get your dough to pull together. Only add water 1 tablespoon at a time.
- Store chickpea chips in an airtight container at room temperature for up to two weeks.
