These homemade vegan potato tortillas are so easy to make. All you need are a few potatoes and some spelt flour (or all purpose flour). Mix together mashed potatoes with a bit of flour, roll them out and dry fry them in a pan. No oil necessary to make the perfect potato wrap. You're going to love these!

Ingredients
- Potatoes: Yukon gold, Russets and Maris Pipers are all good choices for making tortillas.
- Spelt Flour: Spelt is a nutritious whole grain flour that's packed with vitamins and minerals. It's also higher in protein that wholewheat flour. Plus, it's lower in calories and easier to digest. If you can't find spelt flour, this recipe will still work using all purpose flour.
- Salt (optional): I think adding a bit of salt really makes all the flavors pop, but if you prefer not to add it, that's ok too.
How To Make Perfect Potato Tortillas
- Firstly, cut your potatoes into bite sized pieces. No need to remove the skin. Boil them until they're fork tender, about 15-20 minutes.
- Let the potatoes cool before mashing them. I recommend using a ricer for mashing potatoes, but if you don't have one, it's fine to use a potato masher or a wooden spoon.
- Add your spelt flour to the pan with the potatoes, and using your hands, bring it all together to form a dough. Divide your dough into 8 pieces and roll each piece into a ball. Flatten the ball with your hand.
- Lightly flour your countertop and rolling pin. Roll each potato tortilla out into a circle.
- Heat a fry pan (no oil) until it's smoking hot. Cook the vegan tortilla for one minute on each side. It will puff up as you cook it. Don't worry, as soon as you take it off the heat, it will naturally flatten. No need to push it down.
- Keep your tortillas covered with a tea towel. This will keep them soft and flexible.

- 1 cup spelt flour *or all purpose flour

Instructions
