Learn how to make vegan potato tortillas. With this easy 3-ingredient recipe, they're soft, pliable and so yummy. Use them for burritos, tacos, potato wrap sandwiches, and enchiladas
1¼poundswhite potatoes*about 3 medium sized potatoes
1cupspelt flour*or all purpose flour
½teaspoonsalt*optional
Instructions
Cut the potatoes into bite sized pieces. No need to peel them. Boil for 15-20 minutes, or until fork tender.
Allow the potatoes to cool, slide the skins off and mash them. *see note 1
Add the spelt flour to the pan with the potatoes, and using your hands, bring it all together to form a dough. Divide dough into 8 pieces and roll each piece into a ball. Flatten the ball with your hand.
Lightly flour countertop and rolling pin. Roll each potato tortilla out into a circle.
Heat a fry pan (no oil) until it's smoking hot. Cook the vegan tortilla for one minute on each side. It will puff up as you cook it. Don't worry, as soon as you take it off the heat, it will naturally flatten. No need to push it down.
Keep your tortillas covered with a tea towel. This will keep them soft and flexible.
Notes
1.I recommend using a ricer for mashing potatoes, but if you don't have one, it's fine to use a potato masher or a wooden spoon.
