    Today, we're diving into the world of vegan Halloween monster cookies. These aren't your ordinary treats โ€“ they're colorful, quirky, and absolutely perfect for getting into the spooky spirit.

    What makes these cookies so special? For starters, they come in three vibrant Halloween colors: a ghoulish green, a mysterious purple, and a festive orange. But the really fun bit? Each cookie is decorated with googly eyes that give them personality and a touch of playful creepiness.

    Step 1

    In a large bowl, cream together the vegan margarine, granulated sugar, and brown sugar until smooth and fluffy. Then add the almond milk and vanilla extract, mixing until fully combined.

    In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.

    Gradually mix the dry ingredients into the wet mixture until a dough forms.

    Step 4

    Divide the dough into 3 portions and mix in vegan food coloring (green, purple, orange) into each batch.

    Step 5

    • Roll the dough into 1-inch balls. Place the dough balls on a baking sheet lined with parchment paper, spacing them apart. Gently press vegan candy eyes into the tops of the dough balls.
    • Place the cookie sheet with the dough balls into the fridge to chill for 20 minutes.

    Step 6

    • Preheat the oven to 350ยฐF (175ยฐC). Once the dough has chilled, bake the cookies for 8-10 minutes.
    • Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring them to a wire rack.

    โ„๏ธStorage Instructions

    To keep your monster cookies fresh, store them in an airtight container at room temperature for up to 3 days.

    Refrigerator

    If you want to extend the life of your vegan Halloween cookies, pop them in the fridge where they'll stay good for up to a week. Make sure to separate layers with parchment paper to prevent the cookies from sticking together and to protect the googly eyes.

    Freezer

    These monster cookies freeze beautifully. Place the cooled cookies in a freezer-safe container, again with parchment paper between layers, and they'll keep for up to 3 months.

    Ingredients
      

    • ยฝ cup solid vegan margarine
    • ยฝ cup granulated sugar

    • 2 tablespoons almond milk or any non-dairy milk
    • 1 teaspoon vanilla extract
    • 1 ยพ cups all-purpose flour
    • ยฝ teaspoon baking soda

    • Vegan food coloring green, purple, orange
    • Vegan candy eyes
