Step 1

- In a large bowl, combine cherries, sugar, cornstarch, lemon juice, almond extract (if using), and salt. Stir gently and let sit for 15 minutes.
- In a small bowl, create a slurry by mixing the cornstarch with 3 tablespoons cold water until smooth. Pour the cornstarch slurry into the simmering cherry mixture while stirring constantly.
