    These mango popsicles (aka ice lollies) are vegan, dairy free, gluten free, and they have no refined sugar. They're also absolutely delicious. If you're looking for a flavorful and healthy popsicle recipe, this is it!

    Is there anything better in the summertime than a homemade popsicle? I think kids and adults will agree that popsicles are the ultimate summer treat. There's something so satisfying about this low calorie frozen dessert. You could also try gluten free watermelon popsicles or my chickpea ice cream for a few other great frozen treats.

    The popsicles we enjoyed as kids were little more than water and artificially sweetened juice, but making healthy popsicles that use real fruit and contain no refined sugar is easy. All you need is a silicon mold and a few fresh ingredients.

    How To Pick A Ripe Mango

    The first thing to note when picking a ripe mango is the color. Look for a mango that is mostly orange, peach or red in color. A fully green skin indicates that it's not ripe enough to eat.

    The second way to pick a ripe mango is to give it a gentle squeeze. A ripe mango should give a little, but not so much that it feels mushy. A very firm mango indicates that it's not ripe.

    The third way to tell if a mango is ripe is to note the smell. A ripe mango will emit a slightly floral, sweet smell.

    • Mangos: You'll need two ripe mangos to make this recipe. One medium sized mango generally yields two cups of mango chunks.
    • Coconut Yogurt: I used vegan coconut yogurt because I wanted my mango popsicles to have a tropical flavor. However, you can use any vegan yogurt you have on hand.
    • Coconut Water: Coconut water adds to the subtle coconut flavor.
    • Limes: A good squeeze of lime gives a nice zesty tang to these popsicles.
    • Agave Syrup: Agave syrup is optional in this recipe. I'd recommend using it if your mangos are not fully ripe and you need a bit more sweetness. You can also use maple syrup.

    How To Make Mango Popsicles

    • Peel the mangos and cut them into rough chunks. If you're using frozen mango chunks, make sure they're defrosted.
    • Put all the ingredients in the blender. Blend until the mixture is smooth and creamy.
    • Pour the mixture into the popsicle molds, insert the popsicle sticks and freeze for 4-6 hours. Popsicles made in larger molds will take longer to freeze than popsicles made in smaller molds.
    • Release your mango popsicles gently from the mold. If the popsicles stick inside the mold, run a bit of warm water over the outside of the mold.

    Mango popsicles are a healthy, low calorie delicious summertime treat! Full of sweet and tangy mango and coconut flavors, these homemade popsicles are the ultimate frozen dessert. Plus, they're dairy free, gluten free and have no refined sugar.

    Ingredients
      

    • 4 cups mango chunks fresh or frozen *see note 1.
    • ⅔ cup coconut yogurt
    • 2 teaspoons agave nectar *or maple syrup
    • 1 tablespoon lime juice
    • 1 cup coconut water

    Instructions
     

    • Peel the mangos and cut them into rough chunks. If using frozen mango chunks, make sure they are defrosted.

    Notes

    1. 1 medium sized ripe mango generally yields 2 cups of mango chunks.
    2. If using frozen mango chunks, it's important to allow them to defrost before blending them.
    3. Store popsicles in the freezer for up to 3 months.  You can either store them in the molds, or remove them from the molds, wrap in plastic and store them individually.
