Ingredients

  • 4 cups mango chunks fresh or frozen *see note 1.
  • ⅔ cup coconut yogurt
  • 2 teaspoons agave nectar *or maple syrup
  • 1 tablespoon lime juice
  • 1 cup coconut water

Instructions

  • Peel the mangos and cut them into rough chunks. If using frozen mango chunks, make sure they are defrosted.
  • Put all the ingredients in the blender. Blend until the mixture is smooth and creamy.
  • Pour the mixture into the popsicle molds, insert the popsicle sticks and freeze for 4-6 hours.
  • Release gently from the mold. If the popsicles stick inside the mold, run a bit of warm water over the outside of the mold.

Notes

  1. 1 medium sized ripe mango generally yields 2 cups of mango chunks.
  2. If using frozen mango chunks, it's important to allow them to defrost before blending them.
  3. Store popsicles in the freezer for up to 3 months.  You can either store them in the molds, or remove them from the molds, wrap in plastic and store them individually.
