    The queue outside the original Naples location can stretch for blocks, with tourists and locals alike waiting hours for a table.     Gabriele Bonci isn't just a pizza maker – he's a dough wizard. His tiny shop near the Vatican, Pizzarium, has transformed Roman pizza al taglio (pizza by the cut) into an art form. The display case filled with rectangular pizzas topped with seasonal ingredients looks more like an art gallery than a takeaway joint.

    Bonci's dough is the star – highly hydrated and fermented for days, creating an airy, cloud-like texture with a crisp bottom. Scissors, not pizza wheels, are used to cut your desired portion, which is then weighed and priced accordingly.
