You only need a few ingredients to make these delightful vegan palmiers. Flaky on the outside and gooey and sweet on the inside, these lovely little pastries make the perfect tea time treat. And, because they're heart shaped, they make the perfect sweet Valentine's Day treat for that special someone.

What Is A Palmier Pastry Anyhow?
Palmiers are French pastries that are made of layers of puff pastry swirled around a sweet or savory filling. In this recipe I've used a strawberry filling, but I'll give you some ideas for other creative vegan palmier fillings as well.
Know as palmeras in Spain, orejas in Mexico and Genji pie in Japan, this sweet pastry has a home in almost every country.
And, the great thing about making homemade vegan palmiers is that most brands of puff pastry are accidentally vegan. In the UK, you can Jus Roll and in the USA you can use Peppridge Farms puff pastry.
How To Make Vegan Palmiers
- If you are using frozen puff pastry sheets, take one sheet out of the freezer the night before you intend to make your palmiers. Stick it in the fridge overnight to defrost.
- Sprinkle the granulated sugar over a cutting board and place one sheet of your puff pastry on top of the sugar. Using a rolling pin, roll the puff pastry out to a 15 inch x 10 inch rectangle.
- Spread your jam out evenly over the puff pastry. Turn the rectangle so that the longest side is facing you, and tightly roll one side to the center the rectangle (see picture 2). Now, repeat on the other side.
- When the two rolls have met in the middle, gently press the dough together. Wet your finger with a little bit of water and run it down the seam to seal the dough.
- Cut the puff pastry roll into ยผ inch pieces. Line a baking tray with parchment paper and transfer your vegan palmiers to the tray, being careful to leave plenty of space between them. They'll really puff up in the oven, so be careful to not place them too close together.
- Now, transfer your baking tray to the freezer for 15 minutes.
- Preheat your oven to 375 F (190 C). Sprinkle the palmiers with Demerara sugar (optional).
- Bake your palmiers for 15-20 minutes. They're done when they are flaky and golden.
- Remove the vegan palmiers from the oven and allow them to cool on a cooling rack.
- Enjoy!

- Cinnamon and sugar.
- Homemade Spinach Pesto Without Nuts.

Frequently Asked Questions
Palmiers are best eaten on the day they are baked. If you do happen to end up with leftovers, store them in an airtight container at room temperature. Do not store them in the fridge.
Yes, you can freeze them before or after they're baked. In both cases, line a baking tray with parchment paper and space the palmiers out evenly on the tray. Freeze for two hours. Transfer the palmiers to a reusable freezer bag and freeze for up to two months.

Vegan Strawberry Palmier
Ingredients
- 1 sheet puff pastry
- 2 tablespoons cane sugar
- 3 tablespoons strawberry jam
- 1 tablespoon Demerara sugar *optional
Instructions
- If using frozen puff pastry, defrost in the fridge overnight.
- Sprinkle the cane sugar evenly over a cutting board or Silpat mat.
- Lay the sheet of puff pastry on top of the sugar and roll it out to a 15x10 inch rectangle. Trim the edges to ensure you have a perfect rectangle.
- Spread the jam evenly over the puff pastry. Turn the rectangle so that the longest side is facing you, and tightly roll one side to the center the rectangle. Now, repeat on the other side. When the two rolls have met in the middle, gently press the dough together. Wet your finger with a little bit of water and run it down the seam to seal the dough. *see note 1

Notes
- Alternatively, you can fold the puff pastry, as opposed to rolling it. This will result in a less rounded, more defined shape.
- Watch the palmiers carefully as the sugar can quickly go from caramelized to burnt.
