Today, I'm excited to share with you my recipe for vegan apple cinnamon muffins โ€“ a delicious treat that showcases the natural sweetness of apples.

    These muffins aren't only vegan-friendly, they're packed with the comforting aroma of cinnamon, making them perfect for breezy fall days. There's nothing quite like the aroma of freshly baked apple and cinnamon wafting through your kitchen.

    1. Preheat the oven to 350ยฐF (175ยฐC). Line a muffin tin with paper liners or lightly grease it with oil.
    2. In a large mixing bowl, combine the flour, oats, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg (if using). Whisk until well combined.
    3. In a separate bowl, mix together the applesauce, almond milk, vegetable oil, vanilla extract, and apple cider vinegar.

    1. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
    2. Fold in the chopped apples, nuts, and raisins (if using).
    3. Divide the batter evenly among the muffin cups, filling each about โ…” full.
    4. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
    5. Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.

    You can store these muffins in an airtight container in the refrigerator for up to a week. However, keep in mind that they might dry out slightly.

    Freezer

    If you plan to store your muffins for longer than a week, freezing is the best option. Wrap each muffin individually in plastic wrap or aluminum foil, then place them in a freezer-safe container or resealable plastic bag. Label the container with the date and store in the freezer for up to 2-3 months.

    To thaw them, remove the muffins from the freezer and let th thaw at room temperature for a few hours. If you prefer warm muffins, you can reheat them in the microwave for 15-20 seconds or in a preheated oven at 350ยฐF (175ยฐC) for 5-10 minutes.
