    You Might Find Yourself Making These Chicken Enchiladas Every Week

    If there's one dinner that rarely lets you down, it’s a tray of cheesy, saucy chicken enchiladas. Think of them as the warm hug of weeknight meals – comforting, full of flavour, and far less effort than they look. 

    They're not traditionally British, sure, but they've earned a proper place in the line-up of go-to comfort foods for a reason.

    Whether you're after something that feeds the whole family without fuss, or just need a break from the usual pasta bake, these rolled-up wonders are worth adding to your midweek mix.

    What Makes Them So Good?

    For starters, they’re incredibly adaptable. Got leftover roast chicken from Sunday? Sorted. Prefer things a bit spicier? Add a splash of hot sauce or some chopped jalapeños. 

    Not a fan of coriander? No problem – swap it for spring onions, or leave it out altogether. This is the kind of meal that doesn’t argue with you.

    The base idea is simple: tender chicken wrapped in soft tortillas, smothered in tomatoey sauce, topped with plenty of cheese, and baked until golden and bubbling. 

    But don’t worry – we’re not sending you down a rabbit hole of complicated prep. The real beauty of enchiladas is that once you’ve got the basic method down, you can wing it from there.

    Short On Time? Here's A Shortcut

    Look, not every Tuesday night calls for cooking from scratch – sometimes you're just aiming to eat before 9pm. That’s where a few smart swaps come in.

    You can absolutely use shop-bought enchilada sauce (although if you’ve got 20 minutes and a tin of tomatoes, a homemade version really does taste better). 

    Rotisserie or leftover chicken works a treat, and pre-shredded cheese speeds things up even more – though freshly grated melts better, if you're feeling fancy.

    Warming the tortillas before rolling them makes the whole assembly smoother, and don’t be shy with the sauce. A dry enchilada is a sad enchilada.

    How To Serve Them (Without Overcomplicating Things)

    The best part? You don’t need a dozen sides to make this a proper meal. A handful of chopped lettuce, a squeeze of lime, or a blob of sour cream will do just fine. 

    If you're feeding a crowd or feeling extra generous, serve with black beans or some rice on the side. And if there's a bottle of hot sauce in the fridge? Bring it out.

    Leftovers, if you have any, reheat well the next day. Just pop them in the oven or microwave until warmed through – no need to fuss.
