    Ways To Use Fresh Herbs Before They Spoil

    Fresh herbs have a habit of looking bright and perky when you buy them, only to start wilting in the fridge a few days later. Rather than letting them go to waste, there are plenty of simple, tasty ways to make sure every last leaf earns its keep. 

    These ideas will help you capture their flavour while it’s at its peak, so you can enjoy it now or save it for later.

    Blitz Into Flavoured Oil Or Butter

    A quick blend of herbs with olive oil makes a vibrant drizzle for salads, pasta, or grilled meat. You can also mash chopped herbs into softened butter with a pinch of salt, perfect for melting over hot bread, fish, or vegetables. 

    Both options store well: herb oil will last about a week in the fridge, while herb butter can be frozen in small portions for months.

    Make A Quick Pesto

    Pesto isn’t just for basil! Parsley, coriander, mint, or dill can all be whizzed up with nuts, cheese, garlic, and oil for a fresh, versatile sauce. Use it to coat pasta, stir into soups, or spread on sandwiches. 

    It’s a great way to use a big bunch of herbs at once, and it freezes beautifully for later use.

    Freeze In Ice Cube Trays

    Chop the herbs and pack them into ice cube trays, then top with water or olive oil before freezing. This locks in their flavour and colour, and you can pop a cube straight into sauces, stews, or stir-fries. It’s an easy, low-effort way to have fresh-tasting herbs ready year-round.

    Add To Dressings And Marinades

    Even a handful of herbs can lift a simple vinaigrette or marinade. Chop them finely and whisk into oil, vinegar, citrus juice, or yoghurt for an instant flavour boost. It’s quick, makes everyday meals taste brighter, and stops those last sprigs from being forgotten in the fridge.

    Infuse Into Drinks

    Herbs can add a refreshing twist to drinks, think mint in lemonade or rosemary in sparkling water. Gently bruise the leaves to release their oils before adding them. It’s a simple way to use up small amounts and makes an ordinary drink feel a bit special.
