    These Pumpkin Cookies Are A Soft And Chewy Autumn  Favourite

    There’s something about autumn that just calls for baking – the cosy smells, the golden leaves outside, and the excuse to warm up the kitchen. And if there’s one recipe that captures the season perfectly, it’s these soft, chewy pumpkin cookies. 

    Lightly spiced and full of that comforting pumpkin flavour, they’re the kind of treat that makes you want to put the kettle on and grab a jumper. 

    The best part? They’re incredibly easy to make, and there’s no cakey texture in sight – just pure, chewy perfection.

    The Secret To That Perfect Chewy Texture

    The trick lies in removing excess moisture from the pumpkin puree.

    Spread it thinly on a plate, press it with paper towels a few times, and you’ll be left with a thicker, drier base that blends perfectly with the dough. 

    This step makes all the difference, giving you cookies that are soft and chewy rather than cakey.

    Simple Ingredients With Big Autumn Flavour

    You’ll only need pantry basics: butter, sugar, flour, egg yolks, baking soda, and pure pumpkin puree. 

    Cinnamon adds that familiar warmth, but you can play around with nutmeg, allspice, or ginger for a deeper flavour. 

    A quick roll in cinnamon sugar before baking adds a delicate crunch to the edges.

    Baking And Cooling For Best Results

    Bake the cookies until they’re just set at the edges and still soft in the middle. Let them cool on the tray for five minutes before transferring to a rack – this helps them finish cooking without drying out. 

    For extra autumn flair, drizzle them with caramel or sandwich two together with cream cheese frosting.

    Storing And Freezing Your Pumpkin Cookies

    Keep the cookies in an airtight container for up to three days, adding a slice of white bread inside to maintain softness. 

    You can also freeze the dough or baked cookies for later – perfect for when that pumpkin craving hits unexpectedly.
