    9 Smash Burger Mistakes You Might Be Making

    Smash burgers are known for their thin, crispy edges and juicy centres, making them a favourite both in restaurants and at home.

    While many try to replicate them, simple errors often lead to disappointing results. By recognising the most frequent mistakes, you can improve your cooking technique and enjoy consistently better outcomes.

    Burgers need fat for flavour and texture. Mince that is too lean can result in patties that are dry and crumbly. A fat content of about 20% gives the right balance of moisture and taste.

    Freshly ground chuck is ideal, and asking your butcher to grind it for you often yields better results than pre-packaged mince.

    Smash burgers work because they are thin and cook quickly. If the patties are too thick, they will not flatten properly and you lose the characteristic crust.

    Golf-ball sized portions of mince (about 80–100 grams) spread to the right thickness when smashed, ensuring even cooking and crisp edges.

    A cool or lukewarm pan causes the meat to steam rather than sear, producing grey patties with little flavour. Cast iron skillets or heavy pans hold heat well and are the best choice.

    Preheat thoroughly until a drop of water sizzles and evaporates immediately. This ensures the browning reaction that creates the deep, savoury taste.

    A thin or flexible spatula does not provide enough pressure for flattening. Use a sturdy, flat tool such as a burger press, a wide spatula, or even the base of a small saucepan.

    Lining the meat with parchment paper can help prevent sticking while maintaining an even press.

    A gentle press will not create the thin texture or crisp crust that defines this style of burger. Press the mince firmly for 10–15 seconds so it spreads to the correct thickness.

    This maximises the surface contact with the hot pan, which is essential for flavour and crisp edges.

    Burgers need time to form a crust before being flipped. If moved early, they stick to the pan and tear. After smashing, leave them undisturbed for 2–3 minutes. The patties will release naturally once ready to turn.

    Because the patties are thin, they only need 30–60 seconds on the second side. Overcooking dries them out quickly.

    Remove from heat while still slightly pink in the centre, as they continue cooking briefly after being taken off the pan.

    A bun should complement the burger rather than overwhelm it. Soft yet sturdy options such as brioche, potato rolls, or sesame seed buns work well.

    Lightly toasting the cut sides adds flavour and prevents sogginess by creating a thin barrier.

    Too much seasoning makes the burger salty, while too little leaves it bland. Season just before cooking with a light sprinkle of salt and pepper on top of the mince balls.

    Avoid mixing seasonings directly into the mince, as this changes the texture and can make the burger dense.
