    How To Get Perfectly Grilled Chicken Breasts Every Time

    Dry, bland chicken breasts are enough to ruin even the most promising barbecue. The good news? With the right marinade and a few simple tricks, you can unlock juicy, flavour-packed chicken that deserves centre stage at any summer gathering. Stick around, and you’ll never have to suffer through cardboard chicken again.

    The Secret Is In The Marinade

    If there’s one step you can’t skip, it’s marinating. Think of it as your insurance policy against dry chicken. A simple mix of balsamic vinegar, olive oil, garlic, brown sugar and herbs works wonders - tangy, sweet, savoury and aromatic all at once. The vinegar tenderises, the oil balances, the garlic and herbs bring flavour, and the sugar helps with caramelisation. Here’s a handy breakdown:

    • Garlic: Three cloves are great, but adjust if you love extra punch
    • Balsamic vinegar: Adds tang and depth
    • Olive oil: Smooths and spreads the flavours
    • Brown sugar: Gives subtle sweetness and golden grill marks
    • Herbs: Thyme and rosemary are classics, but oregano or marjoram work too

    Let your chicken soak for at least 20 minutes, though 3 - 4 hours delivers maximum flavour.

    Timing And Temperature Make All The Difference

    Too hot, and your chicken burns before it cooks inside. Too low, and you end up with pale, rubbery meat. The sweet spot is medium-high heat on the grill or a grill pan. Lay the chicken down, resist the urge to poke at it, and let those iconic grill marks do their thing. After about 6 minutes, flip once- no more, no less. 

    Baste with the reserved marinade (the clean portion you set aside earlier), and finish cooking until the internal temperature reaches 75°C. That thermometer is your best friend; no guesswork, no pink centres.

    Rest And Slice Like A Pro

    Here’s a step many people forget: resting. The moment your chicken comes off the heat, the juices are racing around inside. Slice too soon, and they spill everywhere, leaving your chicken dry. Give it at least 5 minutes to settle. 

    Then slice against the grain  -  those shorter fibres mean each bite is more tender. Garnish with fresh parsley or a squeeze of lemon juice, and you’ll be amazed at the difference.

    Serving Ideas To Make It A Meal

    Perfectly grilled chicken breasts are versatile enough to star in just about anything. Slice them over a colourful summer salad, tuck them into flatbreads with tzatziki, or pair with grilled vegetables for a lighter plate. Want comfort food? Serve with buttery mashed potatoes. 

    Craving something bold? Drizzle with chimichurri or serve with a side of spiced rice. The beauty of a well-grilled chicken breast is that it’s a blank canvas - and once you’ve nailed the basics, you can dress it up however you like.
