    Forget The Pie Crust And Try These No-Bake Pecan Pie Truffles Instead

    Love pecan pie but can’t face the hassle of rolling pastry or preheating the oven? These no-bake pecan pie truffles are the answer. 

    Each bite delivers the same rich, buttery sweetness you’d expect from the classic dessert – just in an easier, bite-sized form. 

    Wrapped in silky dark chocolate and filled with caramelised pecans, they’re perfect for sharing, gifting, or sneaking from the fridge when no one’s looking.

    For these rich little truffles, gather a mix of buttery toasted pecans and sweet, crumbly biscuits for the base. 

    Dark brown sugar adds that deep caramel note, while a pinch of salt keeps the sweetness in check. 

    A splash of double cream and a drizzle of maple syrup bring everything together into a smooth, decadent filling. 

    To finish, you’ll need dark chocolate – the kind with a proper cocoa kick – and just a hint of vegetable oil for that glossy, melt-in-your-mouth coating.

    How To Make The Filling

    Start by toasting your pecans – it’s worth the extra few minutes. Toasted nuts give that deep, buttery flavour that mimics the warmth of a baked pecan pie. 

    Combine them with biscuit crumbs, brown sugar, and salt in a large bowl. Add the cream and maple syrup, mixing until the mixture starts to stick together and form clumps. 

    Once combined, roll small spoonfuls into balls and place them on a parchment-lined tray. Pop them into the freezer for half an hour to firm up.

    Coat In Chocolate

    Melt the chocolate and oil together in short bursts in the microwave, stirring between each one until smooth. 

    Dip each chilled truffle into the chocolate, making sure it’s completely coated. Gently shake off any excess and place it back on the tray. 

    Sprinkle the tops with a few extra chopped pecans for a bit of crunch and decoration.

    Chill, Serve, And Enjoy

    Let the truffles set in the fridge for about an hour until the chocolate is firm and glossy. They’ll keep for up to a week in an airtight container or can be frozen for longer if you want to make them ahead of time.

    These pecan pie truffles have all the indulgence of the original dessert – no oven, no pastry, and no fuss required.
