    Chicken And Rice Recipes Enjoyed Around The World

    Chicken and rice have long been paired together in kitchens across the globe. Many cultures have developed their own take on this comforting combination, with dishes ranging from fragrant biryanis to vibrant paellas.

    1. Spanish Paella

    Saffron gives Spanish paella its signature golden colour and unique flavour. Originating in Valencia, the dish was traditionally cooked with whatever was available, including chicken, rabbit, and local beans.

    Paella is cooked in a wide, shallow pan that allows the rice to absorb flavours evenly. Bomba rice is often used because it holds its shape without turning mushy. The socarrat, a crispy layer at the bottom, is especially prized by paella lovers.

    The chicken is marinated in yoghurt and spices before being cooked separately from the rice. During the final stage, the pot is sealed with dough, trapping steam that gently blends the flavours. Fried onions, mint, and coriander finish the dish.

    This combination is often served for Sunday dinners, accompanied by fried plantains or festival bread. The creamy rice balances the spice of the chicken, making it a much-loved national dish.

    Chicken, garlic, and onions are quickly stir-fried before soy sauce, fish sauce, and palm sugar are added for balance. Many cooks add an egg directly to the wok, while cucumber slices and lime wedges are served on the side for freshness.

    Kabsa is a Middle Eastern chicken and rice dish seasoned with spices such as turmeric, baharat, and cinnamon. Whole chicken pieces are slowly cooked until tender, infusing the rice with flavour.

    Nuts and dried fruits such as almonds and raisins are added for sweetness and texture. Often prepared for large gatherings, kabsa is both practical and festive, with one-pot cooking that delivers rich and aromatic results.

    Peru’s version of chicken and rice is easily recognised by its green colour, created by coriander and aji amarillo peppers. Garlic, onions, and cumin form the base, while beer is sometimes used in place of stock to add complexity.

    Vegetables such as peas and red peppers add colour and balance. The dish is often served with beans and salad, making it a complete and filling meal enjoyed by families across the country.

    Dak galbi is a Korean favourite that combines chicken with vegetables and spicy gochujang paste. It is traditionally cooked on a large griddle, with diners sharing the sizzling meal together.

    Cabbage, sweet potatoes, and rice cakes are added, creating a mix of textures. At the end of the meal, rice is fried in the remaining sauce, absorbing all the flavour. Cheese is often melted on top, blending traditional spice with modern comfort.

    10. Nigerian Jollof Rice With Chicken

    Jollof rice is one of West Africa’s most famous dishes, with each country offering its own variation. The rice is cooked in a tomato-based sauce with scotch bonnets, onions, and spices such as curry powder and thyme.

    Long-grain rice absorbs the rich, spicy base without turning soft. Chicken is often cooked separately before being added back to the rice. Party versions cooked over wood fires take on a smoky flavour that many consider the hallmark of great jollof.
