8 Tips To Make The Best Mashed Potatoes You Have Ever Tasted

There’s something wonderfully cosy about a bowl of mashed potatoes that turns out creamy, smooth and full of flavour. I’ve tried enough variations to know that a few simple tweaks can make an ordinary mash taste like something you’d happily serve on a special day. Continue reading to find out how to take yours to the next level.

    1. Choose The Right Potatoes

Not all potatoes are created equal when it comes to mashing. Starchy varieties like Russets and Yukon Golds create the fluffiest, creamiest texture because they break down beautifully when cooked.

Waxy potatoes, on the other hand, tend to become gluey and dense. Pick the right spud from the start, and you're already halfway to perfection without any extra effort required from you.

    2. Salt The Water Generously

Your potatoes soak up flavour whilst they cook, so don't be shy with the salt. The water should taste like the sea - salty enough that you'd notice it if you took a sip.

This step ensures every bite is seasoned from the inside out rather than just on the surface. Skipping this means you'll be chasing flavour later, and it simply won't taste the same no matter how much you add afterwards.

    3. Warm The Milk Or Cream First

Cold dairy can shock your hot potatoes and make them turn grey and gluey instead of fluffy. Warming your milk or cream gently on the hob before adding it keeps everything at the perfect temperature.

This small step preserves that silky, smooth consistency you're after. Plus, warm dairy blends in more easily, creating a uniform texture without lumps or uneven patches throughout your mash.

    4. Mash While The Potatoes Are Hot

Timing matters more than you might think. Hot potatoes mash smoothly and absorb butter and cream like magic, whilst cooler ones turn stubborn and lumpy.

Drain your spuds and get mashing straightaway whilst they're still steaming. The heat helps everything blend together beautifully, giving you that restaurant-quality fluffiness. Waiting even a few minutes can make the job twice as hard and the results less impressive overall.

    5. Add Butter Before Any Liquid

Here's a secret many cooks overlook: butter first, liquid second. The fat coats the starch molecules and prevents them from absorbing too much moisture, which keeps your mash light and airy.

If you add milk or cream first, you risk ending up with a gummy, heavy mess. Stir in the butter until it's completely melted, then gradually add your warmed dairy for the perfect consistency every single time.

    6. Avoid Overmixing

Overenthusiastic mashing releases too much starch, turning your fluffy potatoes into wallpaper paste. Nobody wants that sticky, gluey texture on their plate at dinner time.

Mash just until smooth with a few gentle folds, then stop. A potato masher or ricer works brilliantly, whilst electric mixers can easily overdo it. Remember, a few small lumps are far better than a gummy disaster that ruins the entire dish.

    7. Season In Layers

Great flavour builds gradually, not all at once. Start by salting the cooking water, then taste and adjust after mashing, and finally season once more before serving.

This layering technique ensures balanced, well-rounded flavour throughout rather than random salty or bland spots. Don't forget freshly ground black pepper and perhaps a pinch of white pepper for extra depth that makes people wonder what your secret ingredient is.

    8. Finish With A Flavour Boost

Take your mash from good to unforgettable with a final flourish. Fresh chives, roasted garlic, grated cheese, or a swirl of soured cream can add incredible depth and personality.

Experiment with different combinations to match your meal - perhaps some wholegrain mustard for roast beef or fresh herbs for chicken. This last touch transforms simple mashed potatoes into something memorable that guests will genuinely rave about long after the meal ends.
