    What To Do With Leftover Salmon

    Cooked salmon in the fridge can be easily turned into new dishes rather than going to waste.

    Whether it’s pieces from dinner or leftovers from the barbecue, there are many simple ways to repurpose them into fresh meals.

    1. Salmon Fishcakes

    Flake leftover salmon and mix with mashed potatoes, a beaten egg, and seasonings such as dill and lemon zest.

    Shape into patties, coat with breadcrumbs, and pan fry until golden. Serve with tartare sauce or lemon for a classic option.

    Cold salmon works well in a light salad. Combine chunks with lettuce, cucumber, tomatoes, and red onion.
