Courgettes, also known as zucchinis, are one of the most versatile vegetables of the summer.

Whether they come from your garden, a local greengrocer, or the supermarket, they lend themselves to a wide range of dishes. From quick sides to hearty mains, courgettes can add freshness, colour, and flavour to everyday meals.

This content is for general information only. Taste, results, and appearance may vary depending on cooking methods and ingredients. Photos are symbolic and may not represent exact dishes.

    1. Courgette Pesto Pasta

Blending courgettes into pesto creates a creamy texture and adds extra vegetables without altering the classic basil and Parmesan flavour.

Tossed through pasta, it makes a quick and satisfying dinner. A handful of toasted pine nuts or walnuts on top gives extra crunch.

    2. Turkey And Courgette Burgers

Adding grated courgette to turkey mince keeps the patties juicy and tender. Mixed with herbs like parsley or mint, these burgers are light but full of flavour.

Serve them hot from the grill with a dollop of spiced mayonnaise or yoghurt sauce.

    3. Courgette And Black Bean Stuffed Sweet Potatoes

Baked sweet potatoes make a hearty base for a filling of sautéed courgette, black beans, and spices. A little melted cheese on top makes it comforting without being heavy.

Finished with sour cream and herbs, it’s both colourful and satisfying.

    4. Courgette And Goat’s Cheese Pasta

Pasta tossed with sautéed courgette and creamy goat’s cheese makes a simple but flavourful meal. The courgette softens in the pan, adding freshness that balances the tangy cheese.

A scattering of toasted walnuts or herbs completes the dish, turning an easy recipe into something that feels effortlessly elegant.

    5. Courgette And Bean Salad With Quinoa

Thinly sliced raw courgette combines with cannellini beans and quinoa for a hearty salad. Fresh herbs such as parsley, dill, and mint add brightness.

A lemon vinaigrette ties everything together, making it an excellent choice for picnics or make-ahead lunches.

    6. Ratatouille

A French classic that celebrates summer vegetables. Courgettes, aubergines, peppers, and tomatoes simmer slowly with olive oil and herbs, developing a rich flavour.

It’s versatile too – delicious hot, warm, or cold, often served with bread to soak up the sauce.

    7. Udon With Seared Beef And Courgette

Thick udon noodles are stir-fried with courgette and thinly sliced beef for a quick and filling meal. A sauce made from soy, ginger, and mirin brings savoury depth.

It’s a simple dish that delivers plenty of flavour in under half an hour.

Halved courgettes become edible bases when filled with tomato sauce, mozzarella, and toppings like mushrooms or turkey pepperoni.

They bake until soft but still hold their shape. It’s a lighter option that children can help prepare and customise.

    9. Baked Courgette Fries With Parmesan

Courgette sticks coated in Parmesan and breadcrumbs turn crisp in the oven. Garlic and paprika add extra flavour, while dipping sauces such as mayonnaise or yoghurt make them even more appealing.

They’re a lighter alternative to chips, ideal as a snack or side.

    10. Courgette Muffins

Courgette adds natural moisture to muffin batter, keeping the texture soft without needing much extra fat. They can be made savoury with cheese and herbs, or sweet with cinnamon and nuts.

Ideal for lunchboxes or quick snacks, they’re a versatile way to use up surplus courgettes.
