    Make sure you've covered every corner and created an even layer across the bottom. Pop it straight into the fridge for at least thirty minutes so the base becomes properly firm and ready to support your luscious filling.

    This stage usually takes a few minutes, so keep an eye on the texture to avoid overwhipping. If the cream becomes stiff or grainy, it can affect the smoothness of the filling.

    Use a large metal spoon and gently fold rather than stir, cutting through the mixture and turning it over. This technique keeps all that air you've whisked in, resulting in a filling that's incredibly light, fluffy and absolutely divine when you finally taste it.

    Remove your chilled base from the fridge and get ready for the most satisfying part. Pour your fluffy cheese mixture over the firm biscuit base in one smooth motion.

    Use a spatula to spread it evenly across the surface, making sure you reach right to the edges. Create a level top by smoothing it gently, though don't worry about perfection since your strawberry topping will cover everything beautifully anyway.

    Rinse about 300g of fresh Scottish strawberries under cold running water and dry them carefully with kitchen paper to prevent excess moisture from softening the cheesecake surface. Remove the green tops using a small knife or huller, then slice larger berries into halves or quarters while leaving smaller ones whole for variety in texture.

    Taste a slice before assembling, as sweetness can vary depending on the season. If needed, gently toss the strawberries with 1–2 teaspoons of caster sugar to enhance flavour.

    Refrigerate for at least four hours, although leaving it overnight helps the filling firm up fully and improves the flavour. When ready to serve, run a thin knife around the edge before removing the springform ring.

    Chilling properly helps achieve clean slices and a stable texture.
