This bright pink fruit and yogurt parfait is the perfect light and nourishing breakfast or snack. Bursting with flavor from sweet maple syrup, tart pomegranate seeds, and fresh berries, this parfait also delivers a healthy dose of protein, fiber, and probiotics. The star ingredient is the vivid fuchsia beetroot powder, which not only gives this yogurt parfait its beautiful color, but also adds an earthy, slightly sweet depth of flavor.
Combine the oats, chia seeds, milk and pomegranate seeds in a cup or canning jar. You might need to adjust the amounts slightly depending on the size of glass you use.
Leave the oat mixture to set in the fridge while you prepare your yogurt. If you want a thick, gel-like consistency, I recommend leaving the chia overnight oats mixture in the fridge for at least one hour. I usually do this step the night before I intend to make my yogurt parfait.
In a separate bowl, combine the yogurt with the beetroot powder and maple syrup. Stir to combine.
Layer the yogurt on top of the overnight oats, and top with the fresh fruit.

The overnight oats can be made up to 3 days in advance. Just store the oat mixture covered in the refrigerator until ready to assemble.The yogurt can also be prepared 1-2 days in advance. Stir together the yogurt, beetroot powder and sweetener. Store covered in the fridge.The berries can be washed, dried and stored in an airtight container in the fridge for 1-2 days as well.When ready to serve, layer the oats at the bottom, dollop on the yogurt mixture, and top with the fresh berries. Assemble individual parfaits into jars or glasses right before eating for ideal texture and presentation. This allows you to do most of the prep work in advance, saving you time before breakfast or your next sweet treat!
