Ingredients

  • ½ cup vegan butter softened
  • ¾ cup caster sugar
  • 1½ cups flour
  • 2 tablespoons soy milk
  • 1 teaspoon vanilla
  • ½ cup strawberry or raspberry jam

Instructions

  • Using a hand or stand mixer, cream together the softened vegan butter and caster sugar.
  • Add the soy milk and vanilla and mix until combined.
  • Tip the flour in and mix with a spoon until the dough starts to hold together. Using your hands, bring the dough together and shape it into a ball.
  • Lightly flour a large piece of baking paper. Roll the dough out until it's about 5mm thick (¼ inch). Pick up the baking paper, and transfer the dough to a baking tray. Put the tray in the fridge to chill for 15 minutes.
  • Using a flower shaped biscuit cutter, cut out 16 biscuits - 8 for the top, and 8 for the bottom of your jammy dodger. Cut a hole out of 8 of the biscuits - these will be the biscuits on top of the jam. You can use a cake decorating tip for this. If you have extra dough, shape it into a ball, roll it out, and cut out more biscuits. Return the cut out biscuits to the fridge to chill for another 15 minutes.
  • Preheat oven to 375 F (190 C).
  • Bake the biscuits for 12-15 minutes. Remove them from the oven and transfer to a cooling rack. Allow biscuits to cool fully.
  • Spread the 8 bottom biscuits with jam, and top with the 8 biscuits that have a hole cut out of them.
  • Enjoy with a cup of tea!
