Spicy Peanut Noodles can be served as a cold salad or a warm stir fry. They're creamy, salty and tangy and make the perfect easy midweek lunch or dinner.

Instructions
Cook the noodles according to package instructions. Drain and set aside.
In a pan on low heat, combine peanut butter, soy sauce, rice vinegar, sesame oil, honey (or maple syrup), sriracha, minced garlic, and grated ginger. Heat the sauce, stirring continuously.
As the sauce heats, add water 1 tablespoon at a time until you reach your desired consistency. Continue stirring to ensure a smooth and creamy texture.
Once the sauce is heated and well-mixed, toss it with the cooked noodles until evenly coated.
Garnish with chopped green onions and crushed peanuts.

Refrigerator
Store any leftover spicy peanut noodles in an airtight container in the refrigerator. They can be refrigerated for up to 2-3 days.
Freezer
If you want to freeze the noodles for longer storage, I recommend freezing them without the sauce. Cook and cool the noodles completely before freezing. Place them in a freezer-safe container or zip-top bag. When ready to eat, thaw the noodles in the refrigerator overnight and reheat with fresh sauce.The sauce can also be frozen separately. Place it in a freezer-safe container, leaving some room for expansion. Thaw the sauce in the refrigerator before reheating and combining with freshly cooked noodles. If you've added fresh garnishes like green onions and crushed peanuts, it's best to add those just before serving.
