Ingredients
 
 

  • ½ cup silken tofu
  • ½ cup strawberries chopped
  • ½ cup raspberries
  • 1 ripe banana peeled and sliced
  • 2 teaspoons maple syrup adjust to taste
  • ½ cup unsweetened almond milk or any plant-based milk of your choice
  • ½ teaspoon vanilla extract
  • Ice cubes optional, for a colder smoothie

Instructions
 

  • Rinse the berries under cold water. Peel and slice the banana.
  • In a blender, combine the silken tofu, mixed berries, sliced banana, spinach leaves (if using), honey or maple syrup, almond milk, and vanilla extract. If you prefer a colder smoothie, you can also add a handful of ice cubes.
  • Blend all the ingredients until smooth and creamy. If the smoothie is too thick, you can add more almond milk, a little at a time, until you reach your desired consistency.
  • Taste the smoothie and adjust the sweetness by adding more honey or maple syrup if necessary.
  • Pour the smoothie into glasses and serve immediately. You can garnish with additional berries or a sprinkle of chia seeds if desired.

Smoothies are great healthy meal prep options. Here's how to make this recipe and store it in the fridge for a quick, healthy breakfast option:

Refrigerator

After blending, transfer the silken tofu smoothie into airtight containers and store them in the refrigerator. When you're ready to drink your smoothie, give the container a shake or stir and pour it into a glass.

Freezer

The easiest way to meal prep smoothies is to chop up all the fruit and put each serving into its own freezer bag. I don't recommend freezing silken tofu. It changes the texture. Place the smoothie packs in the freezer. They can be stored for up to 1-2 months. Thaw overnight in the fridge, and all the contents to your blender along with the silken tofu, maple syrup, almond milk and vanilla extract.
