¼teaspoonground nutmeg
½teaspoonground cinnamon
¼teaspoonsalt
3tablespoonsvegan butter
3tablespoonsvegetable oil
Instructions
Preheat oven to 250° F (120 ° C) Prepare a baking tray with a wire rack.
In a medium sized bowl whisk together the Just Egg, almond milk, vanilla extract, cinnamon and salt.
In a large baking tray lay out the six slices of bread. Pour the Just egg mixture over the bread and turn each slice over in the mixture. Leave it to soak in for 5 minutes. If the pan is not large enough to lay your French toast out flat, ensure that each slice is coated in the egg mixture .
Heat 1½ tablespoons of vegan butter and 1½ tablespoons of vegetable oil in a large non-stick saute pan. Fry French toast for 3-4 minutes on each side. Transfer to wire rack and and place in oven while the rest of the French toast is cooking.
After 3 slices of bread have been fried, wipe out the pan and add the remaining 1½ tablespoons of vegan butter and 1½ tablespoons of vegetable oil to the pan. Fry the remaining slices of bread, transferring each slice to the oven when it's finished cooking.
Notes
Ideally, it's best to use day old bread. Cut the slices of bread the night before you intend to make French toast, and leave them on a plate on the counter overnight. If you forget to do this, don't worry...the recipe will still work!
❄️Storage Instructions
French toast is best enjoyed fresh off the griddle, but if you happen to have leftovers, here's how to store them:
Refrigeration:
If you have leftovers, allow them to cool completely before refrigerating. Store in an airtight container or wrap individual slices in plastic wrap. They can stay fresh in the refrigerator for up to 2-3 days.
Freezer:
Place a sheet of parchment paper between slices to prevent sticking. Store in a freezer-safe bag for up to 1-2 months.
Reheating:
To reheat, use a toaster oven for a crispy texture. Alternatively, you can warm them in a skillet over medium heat. Avoid reheating in the microwave as it can make the French toast soggy.
