Coffee Oatmeal

Coffee oatmeal? That's right! And, you won't believe how rich and satisfying adding a bit of coffee to your morning oatmeal makes it. It's simple, and only requires a few ingredients that you already have on hand.

Ingredients
 
 

  • 1 cup rolled oats
  • 1½ cups water
  • ½ cup brewed coffee
  • ½ cup milk dairy or plant-based
  • 1 tablespoon maple syrup or sweetener of your choice
  • ¼ teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: sliced almonds shredded coconut, chocolate chips, fresh berries, etc.

Instructions
 

  • In a small saucepan, bring the water to a boil. Add the rolled oats and reduce the heat to medium-low. Cook for about 5 minutes, stirring occasionally, until the oats have absorbed most of the water and become creamy.
  • While the oats are cooking, brew a ½ cup of strong coffee using your preferred brewing method.
  • Once the oats are cooked, pour in the brewed coffee, milk, maple syrup (or sweetener), vanilla extract, and a pinch of salt. Stir well to combine.
  • Continue cooking the oatmeal for another 2-3 minutes, stirring occasionally, until it reaches your desired consistency. If it becomes too thick, you can add more milk to thin it out.
  • Remove the oatmeal from the heat and let it sit for a minute or two to cool slightly.
  • Serve the coffee oatmeal in bowls and garnish with your favorite toppings, such as sliced almonds, shredded coconut, chocolate chips, or fresh berries.

Notes

Make-Ahead Instructions:
  1. Cook the coffee oatmeal according to the recipe instructions.
  2. Allow the oatmeal to cool to room temperature.
  3. Once cooled, portion the oatmeal into individual airtight containers or resealable bags.
  4. Refrigerate the containers or bags with the oatmeal for up to 4-5 days.
Storage Instructions:
  1. If you have leftover cooked coffee oatmeal, transfer it to an airtight container while it's still warm to prevent it from drying out.
  2. Allow the oatmeal to cool completely before sealing the container.
  3. Store the container in the refrigerator for up to 4-5 days.
  4. When ready to enjoy, you can eat it cold or reheat it in the microwave or on the stovetop with a splash of milk or water to restore its creamy texture. Stir well before serving.
