8 Cheeses To Avoid In Your Grilled Cheese Sandwich

Making the perfect grilled cheese sandwich is an art that starts with choosing the right cheese. While many varieties melt beautifully into gooey goodness, others can turn your sandwich into a disappointing mess. Not all cheeses were created equal when it comes to this classic comfort food.

This article is for general information and entertainment purposes only. The cheeses listed may vary in taste and texture based on personal preferences and cooking methods. Always feel free to experiment with different cheeses to find what works best for you.

    1. Feta

Crumbly and salty, feta simply refuses to melt properly. Instead of creating that stretchy texture we all crave, it stays in stubborn chunks.

The high moisture content means your sandwich might become soggy rather than crispy. Plus, its strong tangy flavour can overwhelm the simple pleasure of a classic grilled cheese.

    2. Blue Cheese

The pungent personality of blue cheese might be brilliant on a cheese board, but between two slices of bread? Absolute chaos!

Its strong flavour dominates everything it touches, and the melt pattern tends to be oily rather than creamy. Many find the powerful aroma too overwhelming when heated, turning a simple sandwich into an assault on the senses.

    3. Goat Cheese

Tangy and distinctive, goat cheese has a wonderful flavour but terrible melting properties for sandwiches. Rather than becoming stretchy, it turns oddly grainy.

The texture becomes almost paste-like when heated, missing that satisfying pull when you take a bite. Though delicious in many dishes, its crumbly nature makes it a poor choice for the perfect grilled cheese experience.

    4. Ricotta

Lovely in lasagna but troublesome in toasties! Ricotta's high moisture content creates a soggy sandwich disaster waiting to happen.

This soft cheese lacks the structure needed to create that perfect melty stretch. What you'll end up with is bread that's wet in the middle and a filling that oozes out the sides at first bite - more like a messy pudding than a proper sandwich.

    5. Brie

Surprising, isn't it? Despite being wonderfully melty, brie's rind creates textural problems in a simple grilled cheese.

Without removing the rind (a faffy task), you'll get chewy bits that disrupt that smooth mouthfeel. The cheese itself melts almost too well, often running straight out of your sandwich and creating a messy puddle in your pan rather than staying put between the bread.

    6. Cottage Cheese

Those little curds spell big trouble for your sandwich dreams. Cottage cheese stubbornly maintains its lumpy texture even when heated.

The whey separates when warmed, creating a watery mess that soaks into your bread. Rather than the unified melty layer you're after, you'll end up with soggy bread spotted with warm, slightly rubbery cheese lumps - hardly the comfort food classic you were craving.

    7. Cream Cheese

Bagel's best friend becomes a sandwich's worst nightmare when heated. Cream cheese doesn't so much melt as it does liquefy completely.

The moment your pan heats up, it transforms into a runny sauce that escapes your bread faster than you can flip it. What remains is often an empty pocket of bread with a greasy coating - all the cheese having made a break for freedom during cooking.

    8. Parmesan

Hard and aged, Parmesan has a high melting point that's problematic for quick sandwich cooking. By the time it begins to soften, your bread has already burnt to a crisp!

Even when it does eventually melt, it separates into oil and protein, creating an unpleasant grainy texture. The intense flavour can be overwhelming too - better saved as a flavourful topping rather than your sandwich's main event.
