For The Vegan Kale Salad 9 cups fresh kale chopped , stems removed 2 apples chopped 1½ cup cooked quinoa ¾ cup blueberries ½ cup dried cranberries ¼ cup sunflower seeds ¼ cup vegan cheese *optional For The Creamy Salad Dressing 3 tablespoons olive oil extra virgin 2 tablespoons balsamic vinegar 3 tablespoons vegan mayonnaise 1 teaspoon Dijon mustard 1 teaspoon maple syrup
Wash the kale and remove the stems.
Dice the apples apples. No need to peel.
Add the quinoa, cranberries, blueberries and sunflower seeds. Toss the salad with salad spoons until everything is well combined.
