Vegan Chipotle Mayo

This vegan chipotle mayo is creamy and smoky. It only takes 5 ingredients and 5 minutes hands-on time to make this wonderful spread. Use it on sandwiches, tacos, pasta or potato salad.

Ingredients
  

  • 1 cup raw cashews soaked
  • 2 tablespoons chipotle sauce
  • 1 garlic clove minced
  • 1 tablespoon lime juice
  • ¼ teaspoon salt

Instructions
 

  • Soak the cashews for 4-6 hours or overnight. *see note 1 for quick soak method.
  • Rinse the cashews and add to a blender or food processor.
  • Add the chipotle paste, lime juice, sea salt, and garlic. Blend until the sauce is creamy. Add water 1 tablespoon at a time to thin the sauce to desired consistency.

Notes

1.If you're in a hurry you can go down the no soak route - pour boiling water over the cashews and leave them to soak for 30 minutes.
