This protein cookie dough has only 6 ingredients; And it contains a massive 20 grams of protein per serving! It's vegan and gluten free and can be whipped up in under 10 minutes. And, most importantly it's insanely delicious.
Whisk together the oat flour and the protein powder in a large mixing bowl.
Add the peanut butter, maple syrup, vegan yogurt , vanilla and chocolate chips. Stir until the dough holds together. It should have the consistency of cookie dough. If the dough is too loose, add a bit more protein powder. If it's too dry, add a bit more yogurt.
Store in the fridge for best results.
Notes
If you need this recipe to be gluten free, please make sure that your oats are clearly labeled gluten free. Some oats may be processed on a line with products that contain gluten.
Store protein cookie dough in the fridge for up to 4 days.
To freeze protein cookie dough:
Form the dough into balls or flatten them into disks. This will make it easy to portion out the dough when you are ready to bake.
Place the dough balls or disks on a baking sheet lined with parchment paper. Make sure they're not touching each other.
Freeze the dough for 30 minutes to 1 hour, or until they are solid.
Once the dough is frozen solid, you can transfer them to an airtight container or a freezer bag.
The dough can be stored in the freezer for up to 3 months.
