Pineapple habanero salsa is a sweet yet spicy salsa loaded with fresh pineapple, juicy tomatoes and habanero peppers. It's so simple to make, and is the perfect addition to picnics, BBQS and game day parties.
Top, tail, peel and core the pineapple. Dice the fruit into small pieces and place in a medium size bowl.
Dice the tomato and add to the bowl with the pineapple.
Finely chop the red onion and cilantro (coriander) and add to the salsa.
Remove the seeds and membrane from the chili pepper and finely chop. Adjust amount used according to taste. Add the habanero chili pepper to the salsa.
Zest the lime and squeeze the juice over the salsa. Add the cumin, chipotle powder and sea salt and gently mix to combine. Allow the salsa to rest in the fridge for at least 10 minutes before serving.
If you like a smoother, less chunky salsa, take half of the pineapple habanero salsa out of the bowl, and whiz it in the food processor.

Refrigeration:
Store your pineapple habanero salsa in an airtight container or jar. It should stay fresh for 3-5 days in the fridge.
Freezer:
If you want to extend the shelf life, you can freeze pineapple habanero salsa. However, note that freezing can change the texture of certain ingredients, especially fruits. Use freezer-safe containers or resealable bags. Leave some space for expansion as the salsa freezes. Thaw the salsa in the refrigerator before serving, and give it a good stir to redistribute any separated liquids.
