Panera Mediterranean Veggie Sandwich

This Panera Mediterranean Veggie Sandwich recipe is a copycat recipe of Panera's most popular veggie sandwich. Packed with fresh veggies, and slathered in creamy hummus with a sprinkling of briny feta, this sandwich makes a fresh and healthy lunch.

Ingredients
  

  • 2 slices artisan bread *see note 1
  • 2 tablespoons hummus
  • 2 tablespoons vegan feta *optional
  • 1 Heirloom tomato sliced
  • 8 cucumber rounds thinly sliced
  • ½ cup greens such as watercress, arugula or spinach
  • salt and pepper

Instructions
 

  • Spread the hummus on both sides of the bread and sprinkle with vegan feta. Alternatively, just use hummus and leave the feta off.
  • Pile on the roasted red peppers, followed by the cucumbers, greens, tomatoes and red onions.
  • Sprinkle generously with salt and pepper.
  • Slice your sandwich in half and enjoy!

Notes

  1. Panera uses tomato basil bread on their Mediterranean veggie sandwich. It's not vegan, and difficult to find such a particular artisan bread on the shelves of your local grocery store. So, feel free to use whatever bread you prefer. I've made this sandwich with whole wheat bread and sourdough. Both were delicious. You can also make this veggie sandwich gluten free by simply using your favorite gluten free bread. I love Food For Life's Sprouted Bread.
