Making sushi rice in a rice cooker is a game-changer for any sushi enthusiast or home cook. With just a few simple steps and the right ingredients, you can easily create perfectly cooked and seasoned sushi rice that rivals your favorite Japanese restaurant.
2cupsshort-grain Japanese ricealso known as sushi rice
2cupswater
4tablespoonsrice vinegar
2tablespoonssugar
1teaspoonsalt
Instructions
Rinse the rice in a fine-mesh strainer until the water runs clear. This removes excess starch and helps prevent the rice from becoming too sticky.
Transfer the rinsed rice to the rice cooker and add 2 cups of water. The ratio of rice to water should be 1:1. Close the rice cooker and start the cooking process according to the manufacturer's instructions.
While the rice is cooking, combine the rice vinegar, sugar, and salt in a small saucepan. Heat the mixture over low heat, stirring until the sugar and salt dissolve. Remove from heat and let cool.
When the rice is done cooking, let it sit in the rice cooker for 10 minutes to steam and absorb any remaining moisture.
Transfer the cooked rice to a large bowl. Pour the vinegar mixture over the rice and gently fold it in using a rice paddle or spatula. Be careful not to overmix, as this can make the rice mushy.
Allow the rice to cool to room temperature before using it to make sushi. You can fan the rice to help it cool more quickly.
Notes
The key to perfect sushi rice is using the correct rice-to-water ratio and not overmixing the rice when seasoning it with the vinegar mixture. This recipe should yield about 4 cups of sushi rice, which is enough for 4-6 sushi rolls.
