News flash - You can make vegan brownies from a mix, and it's not that hard...if you know a few secrets. I get asked how to make fudgy, gooey brownies from a mix a lot! And with good reason. Who doesn't want a short cut to brownie deliciousness? This recipe will transform a store bought brownie mix into a moist, gooey vegan brownie delight.
2chia or flax seed eggs2 tablespoons chia seeds, plus 5 tablespoons water = 2 chia eggs
½cupvegan buttermelted
½cupinstant coffee
¼teaspoonbaking powder
Instructions
Preheat oven to 350° F (175° C). Line an 8x8 inch baking tin with parchment paper.
Make chia eggs by combining 2 tablespoons of chia seeds with 5 tablespoons of water. Set aside.
Sift the baking powder and box mix into a large mixing bowl.
Add the melted butter, coffee and chia eggs. Mix until smooth. Be careful not to over mix. Transfer the batter to the prepared pan.
Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. * see note 1 Allow the brownies to cool in the pan before slicing.
Notes
The times indicated in the recipe are for an 8x8 inch pan. If you use a larger pan, you will need to reduce the cooking time.
