Easy Chocolate Covered Pecans

Keri Bevan
Chocolate covered pecans are a classic holiday treat that everyone loves. In fact, I think these deliciously sweet and salty snacks are the perfect indulgence any time of the year. And... bonus...they're vegan, vegetarian, gluten free and keto friendly!

Ingredients

  • 1½ cups pecan halves
  • 2 teaspoons coconut oil
  • 4 ounces dark chocolate

Instructions

  • Preheat oven to 350° F (175° C). Line a baking tray with parchment paper. Spread the pecan halves out evenly over the tray and bake for 8-9 minutes, turning the pecans over once at the halfway point. Allow the pecans to cool for 10 minutes.
  • Put the chocolate and coconut oil in a small deep bowl. Microwave in increments of 30 seconds, stirring every seconds until the chocolate is fully melted.
  • Using kitchen tongs, dip the pecans one by one into the melted chocolate, letting any excess chocolate drip off. Set them on a parchment lined tray. Only use the tray you toasted them on if it's fully cooled.
  • Sprinkle with (optional) flaky sea salt. Allow the pecans to cool for 1 hour at room temperature, or 20 minutes in the refrigerator before serving.

Notes

  1. Store chocolate covered pecans in an airtight container in the fridge. They will start to melt if left at room temperature for too long, so be sure to keep them in the fridge until you're ready to serve them.
