These dairy free sugar cookies are ultra soft and chewy with lightly golden, crispy edges. And best of all, there's no complicated ingredients in this recipe . You only need 8 simple ingredients that you probably already have in your pantry to make the best sugar cookie you've ever tasted - and all with no dairy or eggs.
Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, cream together the dairy-free margarine and sugar until light and fluffy. You can use a hand mixer or a stand mixer for this.
Add the applesauce, vanilla extract, and almond extract (if using) to the creamed mixture. Mix well until combined.
Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving some space between each cookie.
Use the bottom of a glass or a fork to flatten each cookie slightly. Do not completely flatten your cookies. Just give them a light press.
Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Once the cookies are cooled, you can decorate them with dairy-free icing or enjoy them as they are.
Notes
Note: Dairy free sugar cookies are softer than cookies made with dairy and eggs. They might feel soft in the center when you first take them from the oven. This is ok! Let them cool for a few minutes on the baking tray before transferring them to a cooling rack, and they'll firm up.
