    This remarkable tuber grows in almost every country, thriving in diverse climates from the Andes Mountains to Russian plains.

    Got an old spud sprouting eyes in your pantry? Don't toss it! Those sprouts can become your next potato crop.

    Simply cut the potato into chunks with at least one eye per piece, let them dry overnight, and plant about 4 inches deep in loose soil. Within weeks, leafy green plants will emerge.

    The Inca civilization particularly revered potatoes, developing freeze-drying techniques to preserve them for years. Spanish conquistadors brought potatoes to Europe in the 1500s, forever changing global food systems.
