Not Enough Time For Proofing
Patience is essential when it comes to proofing dough. Yeast needs sufficient time to feed on sugars and produce the carbon dioxide gas that creates those lovely air pockets.
Rushing this stage results in dense, heavy bread that hasn't had a chance to develop properly. Most recipes call for dough to double in size, which typically takes one to two hours.
Environmental factors like room temperature affect proofing time, so watch the dough's size rather than just following the clock blindly.
The Dough Is Too Dense Or Dry

Too much flour creates a stiff, heavy dough that yeast struggles to lift. When measuring flour, it's easy to accidentally pack too much into your measuring cup, throwing off the entire recipe balance.
A properly hydrated dough should feel slightly sticky but manageable. If your mixture looks crumbly or feels tough, add water one tablespoon at a time whilst kneading.

Room Temperature Is Too Cool For Rising

During winter months, find creative warm spots like near a radiator, inside a slightly warmed oven (turned off), or even inside your microwave with a cup of hot water.
